Roasted Broccoli with Cheese

  • 350 g Broccoli Florets (1 bunch)
  • 3 Cloves of Minced Garlic
  • 40 g  Grated Vegan Cheese (Parmesan or Mozzarella)
  • 35 ml Olive Oil
  • 10 g Sea Salt
  • Pinch of Pepper


  • Pre-heat your oven to around 220 C. Line a large baking tray with parchment paper.
  • Start by steaming the broccoli.
  • In a metal bowl, add the steamed broccoli florets. Drizzle all the of florets with the Olive Oil, add the Grated Vegan Cheese, Salt and the Minced Garlic.
  • Mix the broccoli with the rest of the ingredients, making sure all the florets are covered in oil and the seasoning.
  • Add the broccoli to the baking tray, making sure all the florets are lying flat side down not overlapping each other.
  • Bake for around 12-15 minutes or until a golden brown colour developed on the edges. Pierce with a fork to ensure its tender.
  • Served hot, straight from the oven.
