Courgette Fritters

Ingredients
  

  • 1 Large Cucumber (Thinly Sliced)
  • 2 Cloves of Minced Garlic
  • 300 g Unsweetened Coconut/Soy Yogurt
  • 10 g Fined Chopped Dill
  • Juice of 1 Lemon
  • 7 g Sea Salt + Black Pepper
  • 20 ml Apple Cider Vinegar
  • 10 g Dijon Mustard
  • 5-10 g Maple Syrup

Instructions
 

  • In a mixing bowl, add all the ingredients apart from the Dill and Cucumber. Mix everything together until it develops a nice, smooth texture.
  • Then add the Dill and the Cucumber into the mixture and fold together with a spoon  until all the Cucumber is covered by the dressing.
  • Season to taste.  While it is best served fresh but you can store it in the fridge for up to 2 days.
