Ingredients
- 1 Large Cucumber (Thinly Sliced)
- 2 Cloves of Minced Garlic
- 300 g Unsweetened Coconut/Soy Yogurt
- 10 g Fined Chopped Dill
- Juice of 1 Lemon
- 7 g Sea Salt + Black Pepper
- 20 ml Apple Cider Vinegar
- 10 g Dijon Mustard
- 5-10 g Maple Syrup
Instructions
- In a mixing bowl, add all the ingredients apart from the Dill and Cucumber. Mix everything together until it develops a nice, smooth texture.
- Then add the Dill and the Cucumber into the mixture and fold together with a spoon until all the Cucumber is covered by the dressing.
- Season to taste. While it is best served fresh but you can store it in the fridge for up to 2 days.
